The Dock are teaming up with four Sunshine Coast breweries
to bring you our very first ‘Beer Degustation’.
Award winning chef, Chris Sell has created
7 courses of beer influenced dishes for this specialty menu
to pair with the 7 very different beers we will feature on the night.
Be prepared for a delicious tour of the versatility offered by
Sunshine Coast brewers alongside some of the very best
local produce available.
THE FOOD:
Compressed Baby Cucumber
served with whipped goat’s cheese and preserved lemon
Hop Cured Yellowtail Kingfish
served with almond puree, fennel and confit mandarin
Skull Island Tiger Prawn
served with yuzu curd, crispy rice and seaweed dust
Smoked Pork Collarbutt
served with roasted nashi, parsnip puree, macadamia and a madeira glaze
Wood-fired Spatchcock
served with caramelised sunchokes, charred sweet corn and sweet corn sauce
Duo of Cape Grim Beef
grilled fillet and slow braised short rib served with pommes mousseline, king mushroom and
dark ale jus
